POTAGE IRANIEN

ingredient :

  • 1 kg Spinach
  • 250 g Lentils
  • 2 tbsp Split Peas
  • 2 or 3 tbsp Fried Onions
  • 1 medium size Onion (for the meatballs)
  • 300 g ground beef
  • 4 tbsp Rice Flour
  • 1 cup Sour Grape juice
  • 1 tsp Turmeric
  • 3 tbsp Fried Dried Mint
  • 1 cup Chicken broth or one Chicken stock cube
  • Salt, Pepper (as desired)

    Preparation:

    • Step 1
      • Clean, wash and chop the spinach. Soak the lentils and split peas in water and then cook them.
      • Prepare the fried onion (chop two onions and deep fry them).
      • Place 2 tbsp of dried mint in the hot oil and then immediately remove from the heat.
      • Grate the onion and add it to the ground beef. Add the rice flour, turmeric, salt and pepper and knead it well.
      • Make meatballs and fry them in the oil left from the fried onions.

    • Step 2
      • Put the spinach, cooked lentils and split peas in a pot and add 2 cups of water and 1 cup of the chicken broth.
      • Put the lid on and cook on a medium heat and when it starts to boil add turmeric, salt, some of the fried onion and the meatballs.
      • Mix the rice flour and the sour grape juice and gradually add it to the Aash, constantly stirring the Aash.
      • Place the lid back on the pot and let it simmer slowly on a medium heat.
      • The Aash is ready. Serve it in a serving bowl and garnish it with the rest of the fried onions and fried dried mint. Bon appetit!
